Finger-Lickin'-Good Potato Skins

Serves 2 to 4
Ingredients:

2 Potatoes

1 T. Vegetable Oil

4 T. Margarine

½ C. Cheese, grated

¼ C. Sour Cream

¼ C. Bacon Bits

Salt and Pepper, to taste

Materials:

Fork, Knife, Spoon

Aluminum Foil

Oven-Safe Dish

Directions:

  • Preheat oven to 400°.
  • Wash potatoes, prick with a fork, and brush skins with oil.  Wrap the
    potatoes in foil and bake at 400° for 1 hour.  Cool; then cut in half length-
    wise.  Cut again lengthwise, to create 4 quarters.
  • Scoop out insides, leaving about ½ inch of cooked potatoes in their
    skins. (Save the rest of the cooked potatoes for another day.)
  • Arrange the shells in an oven-safe dish and sprinkle shells with salt and 
    pepper.  Spread with margarine; then add cheese, sour cream, and
    bacon bits.
  • Return the shells to the oven to brown for 5 to 10 minutes, until cheese
    bubbles.
